The Zähringer winery looks back on over 175 years of history. But despite all tradition, the ideas remain young. The winery was one of the pioneers in the transition to organic farming in the 1980s and has been Demeter certified for nearly twenty years. As one of the largest organic operations, the Zähringer winery contributes significantly to the development and research for sustainable viticulture in Baden. Here, not only Pinot Noir and Gutedel reach their peak performance, but they also venture into southern grape varieties such as Merlot, Viognier, and Cabernet Franc. Fabian Zähringer is convinced that the care of biodiversity in the vineyards shapes the character of his wines.
