The Schätzel vineyard works organically and biodynamically, and since 2022 also with Demeter certification. The rows are narrow and low to produce healthy shade, which slows down the ripening of the grapes and thus reduces water consumption. In addition, the soils are protected by selected plantings and the fauna is encouraged. The focus is to adapt to the terroir and climate.
The VDP.GROSSE LAGE vineyards include: Ölberg, Hipping, Pettenthal.
Despite, or perhaps because of, the prestigious sites, the winery now produces more and more natural wines - unfiltered and without sulphur additions after fermentation.
