We attach great importance to the natural cultivation of the vines
and pay great attention to the vineyards as the basis
as the basis for special wines.
The grapes are pressed slowly and gently in old basket presses.
Mr Stuart Pigot writes about this:
"It is a very laborious procedure compared to pressing with modern pneumatic machines, but the results speak for themselves."
For fermentation and maturation, the wines are stored in wooden barrels.
