At the winery, sustainable, gentle cultivation is central to the work with the vines. Herbicides are not used, instead Piwi grape varieties and regenerative agriculture are used. A maximum of eighty kilograms of grapes are harvested per acre. Because in addition to taking care of the vineyards, it is also about getting the best out of it. Only in this way can the winery exploit the maximum potential of a wine. In doing so, the winemaker complements his painstaking manual labour with modern technology wherever it makes sense. In this way, he can constantly improve the quality of his wines and better express their character.
A wide variety of grape varieties thrive on limestone and loess loam. Both the classic white wines and deep, velvety and tannin-rich red wines are represented here. The Merdinger Bühl is known as the best site. It scores with tremendous, chalky soils that are virtually pampered by the sun. This is how soft, full-bodied Burgundy wines can be produced.
