The modern organic winery COLLINE DI SOPRA was founded in autumn 2006 and taken over in 2015/16 by the agronomist ETH Ing. Ulrich Ziegler. It is located 10 km from the sea and 15 km from Bolgheri, in the sunny, well-ventilated valley of the Cecina River, in Montescudaio. The 450 ha estate has excellent terroirs. COLLINE DI SOPRA consists of 20 ha of productive vineyards and 68 ha of newly planted vineyards or in preparation with Costa Toscana typical grape varieties, including white grape varieties.

We want to make the best wine, a high quality and interesting wine - 100% Monovitigni. This includes a natural, sustainable cultivation of the vineyards. In the cellar we work with indigenous yeasts and without filtering. We work rigorously according to organic and biodynamic principles. But the work starts in the vineyard. Here we promote soil fertility with targeted perennial seeding. This is important for the vitality of the vines and serves to promote beneficial insects. We see the vineyard as a living organism, work in biodynamics with horn silica, nettle, milk and pay attention to the phases of the moon. Or in selection - everything involves a lot of manual work. We only leave one grape per vine shoot. This way we have a higher concentration in the grapes and that has a very good effect on the quality of our wines. In addition, the grapes are mercilessly sorted out by hand and with an optical selection machine. And in the cellar, the wines are aged for two years in new barriques. We also use batonnage. SOPRA - Monovitigni with passion.
