The Bausewein winery cultivates around 5 hectares of vineyards in the Iphofen vineyards Julius Echter Berg, Kronsberg, Kalb and Dettelbacher Berg Rondell. The vineyards have been in the family for several generations. In the early 1990s, master winemaker Karl Josef Bausewein switched to organic viticulture. Since 1995, the winery has officially managed its vineyards according to the guidelines of the internationally recognised cultivation association "Naturland" and its constant monitoring. Sabrina Bausewein and Matthias Popp took over the estate a few years ago.
Grasses and herbs grow between the rows of vines, protecting the soil from erosion and rapid drying out. The intact and diverse cover crop activates soil life and attracts beneficial insects. The grasshopper, the bumblebee and the snail are welcome visitors. No weed killers, synthetic chemical fungicides, insecticides or artificial fertilisers with easily soluble minerals are used.
Sabrina Bausewein and her husband Matthias Popp are convinced that the key to success lies in nature. By limiting quantities and producing healthy grapes, the Bauseweins use natural cellar management to create powerful, spicy and fruity wines with a full body and bouquet. They produce dry and semi-dry white wines of the Silvaner, Pinot Blanc, Müller-Thurgau, Scheurebe, Kerner, Cabernet Blanc and Bacchus varieties. The Bausewein family grows Pinot Noir and Regent as red wines.
