The farm is located in a small suburb of Canneto Pavese, about 60 km from Milan, and is run by the third generation of the Quaquarini family. The vineyards are located in the hills at an altitude of 200 to 300 metres above sea level. The soil varies from sandy with a strong westward slope for the production of young fragrant reds with good body, to more complex calcareous and clayey soils facing southwest for wines with strong personality and structure and suitable for long ageing, such as the Buttafuoco Storico Vigna Pregana. Quaquarini is one of the founding members of the club of the same name (Buttafuoco Storico) with very strict quality criteria for the production of this rigorously still wine.
Harvesting is done exclusively by hand and pressing begins immediately after harvesting. Alcohol fermentation takes place in steel and cement tanks or in wooden barrels: 55 hl Slavonian oak barrels or in barriques, depending on the wine and the grape variety
The production programme includes the traditional reds and whites of the Oltrepò, three crus, several sparkling wines (Charmat) and a classic bottled fermentation made from 100% Pinot Noir (SPUMANTE CLASSESE), a grappa and the Buttafuoco chinato (the first producer here to make this wine flavoured with cinchona bark, gentian and other herbs and spices).
