Together, the two manage around 8 hectares of vineyard area, which is mainly located in the renowned sites of Eibelstadter Kapellenberg and Eibelstadter Mönchsleite as well as "Altenberg 1172". The focus is on the preservation and care of the steep and steep slope vineyards, which make up more than half of their area. Thanks to the long family tradition, the two can draw on a spectacular portfolio of old Silvaner, Riesling, and Pinot Noir vines. Many of the vines have been growing for over 40 years on the shell limestone soils along the monumental, barren rocks along the Main.
Through diverse greening in the vineyard, the renunciation of mineral nitrogen fertilizers and herbicides, as well as countless hours of manual labor, first-class grapes are produced. In conjunction with the naturally low yields in the steep slopes, this sets the stage for great wines.
What begins in the vineyard is consistently continued in the cellar. The grapes are hand-picked, gently pressed, and vinified in small batches specific to the site. To reflect the terroir as faithfully as possible in the wine, skin contact times, minimal clarification through sedimentation, spontaneous fermentation, and long yeast aging are emphasized. The local and site wines are partly aged in small or large wood as well as in concrete eggs. This results in timeless, characterful wines that express their origin. The incredible efforts in the vineyard and production pay off: For years, critics and tasters have been increasingly enthusiastic about the winery.
