We consistently continue the gentle cultivation of the vineyards in our winery - freely following the idea "to regard the old as the actual new". For us, the old is the basket press, known from Champagne and prescribed for making Champagne. Thanks to it, we are able to obtain musts that can be fermented without further filtration or must treatment.
In order to create wines that are truly individual and full of character, we do not follow any fixed recipes, but rather our basic idea. We look at each vintage and each harvest individually. In this way, each wine is an attempt to come as close as possible to our ideal. Furthermore, we rely on time, barrel ageing and good ideas. Because wine is first created in the mind.
For me, time is one of the most important building blocks for vinifying a great wine. By giving the wines enough time and rest, they can develop on their own.
